Born in brass, still served in it.
Tumbler in one hand, dabara in the other, both too hot to hold for long. That warmth is part of the recipe.
High in the hills of Coorg
A quarter century of the slow pour.
Decoction dripped drop by drop, frothed by hand and poured into brass. Our family has served it this way since 2001.
Tumbler in one hand, dabara in the other, both too hot to hold for long. That warmth is part of the recipe.
The tumbler rises high above the dabara. Height is the secret: the longer the fall, the lighter the froth.
A single ribbon arcs from tumbler to dabara, cooling the cup, folding milk into decoction and waking the aroma.
A dense, bubbled crown rises and rests on top. No machines, no steam wands. Just gravity, brass and a practised hand.
Karnataka · Western Ghats · India
Our estate sits on the misty slopes of Coorg, in Karnataka’s Western Ghats, where families have tended coffee for generations.
Beneath a canopy of silver oak and jackfruit, the cherries ripen slowly, staying cool long enough to turn sweet.
Only ripe red cherries make the cut, chosen branch by branch and carried down the hill in woven baskets.
